Pumpkin Raisin Salad Recipe
It has been a hectic week for us with the students doing their final preparations for the UPSR next week but I still managed to slot in several home-cooked dishes for dinner. Quick and nutritious is my motto so here’s the ever so nutritious pumpkin raisin salad I whipped out in a jiffy.
Pumpkin is rich in fat soluble vitamins and is also a good source of dietary fiber. Â I added carrots because I try to have carrots in every meal so we could look as cute as a bunny ^_^
Ingredients:
1/2 pumpkin
2 eggs
1 small box of raisins
1/2 carrot
mayonnaise
salt and pepper to taste
Method:
1. Boil the eggs. Once boiled, wash with cold water immediately to avoid bruises on the yolk. Cube the eggs.
2. Steam the pumpkin and carrot until soft. Cut pumpkin in half. Mash one half and cube the other half. Cube the carrot.
3. Combine the mashed pumpkin, cubed pumpkin, carrot and eggs and raisins in a large mixing bowl.
4. Top with mayonnaise.
5. Season with salt and pepper.

This salad looks so healthy! But, er, I’m not a fan of pumpkin. Does it still taste as nice if I replaced pumpkin with potato?
Not to me because I’m not a fan of potato! LoL! I stay far, far away from potato if possible…
I’m not a fan of pumpkin either, but I like making pumpkin porridge to my boy. It is so nutritious!

Very healthy and simple salad. But I dun really like pumpkin in soft cube, the texture lembik2 very gerli to me haha. But I’m okay with pumpkin soup or pumpkin in mashed.
This is a healthy snack! Sure taste yummy with the raisins! Will try this recipe one day. Thanks for sharing.
Looks very yummylicious…very healthy too but I think I’ll preferred potato cos I’m a potato fan. :)

Hmmm…I like the way you are making it, but I understand from a good friend of mine that “mayo” is unhealthy. Just wondering if you know of any alternative for it instead?

I love this pumpkin salad, Merryn, because pumpkin is my all time favourite. It looks so good to me. I am feeling hungry looking at it.
Don’t know about the skill to prevent bruises on the yolk, I thought it is “natural” to be like that O.O
Nooooo… egg yolks should not bruise. I don’t like yolks with blue ring on the outside. I love yellow yolk :D
