Homemade Sweet Corn Ice Popsicle
After my first attempt of making the highly successful and delicious banana chocolate ice popsicle that is a huge hit with the kids, I am more confident to try on other healthy treats. Since the kids love corn, I thought of making sweet corn ice popsicle as we always buy sweet corn ais krim potong.
Ingredients needed are just a cob of sweet corn, a glass of fresh milk, a teaspoon of sugar and a pinch of salt.
Remove corn from the cob by simply cutting them away. Easy peasy. I don’t use any special peeler or anything. Just knife and my two chubby hands.
Place the corn in a pot. Add milk, sugar, a pinch of salt and bring to a boil. If you are a hardcore health freak, you might want to omit the sugar and salt but since this is a treat, I don’t mind having a bit of sugar in it. For the salt, just a bit will do. Small, tiny pinch for it to bring out the flavour and not make it too salty. You may add a drop of vanilla essence for added fragrance but I did not.
Once boiled, remove from fire and let cool.
Once cooled, pour into a food processor and blend.
Blend until it is creamy.
Pour into popsicle molds that is now RM0.30 dearer thanx to GST >_< Keep in the freezer overnight.
The delicious sweet corn ice popsicle is ready to be eaten the next day.

This tastes soooo good! They enjoyed this even more than the banana chocolate popsicle. This recipe is definitely a keeper as it tastes exactly like the ice-cream potong we usually buy from the ice-cream man but at least I know the kids are eating the real stuff and not some kind of artificial flavouring. I’m so gonna make more of this again :D

Do you think Sam will eat this? She seldom takes cold stuff due to her weak lung right? But if you want a healthy ice treat then maybe you should try making this. At least Sam is eating homemade ice treat.
