Little Chef Bakes: Cranberry Cornflakes Cookies
My house smells like a bakery these days with the amount of baking we did. Chinese New Year is just two months away so I am busy perfecting our festive cookies recipes. I wanted to work on Christmas cookies but I’m really no good at it. Maybe next year, let me take lessons first *sweat*
Today’s recipe sharing is one of the most popular Chinese New Year cookie – Cranberry Cornflakes Cookies. I’ve always love this crispy yet chewy cookie.
I tested 3 recipes to come out with the one I’m sharing today. That means THREE times baking the same cookies using THREE different recipes. For a moment I was Goldilocks testing out cookies. The first recipe came out too sweet. The second recipe rise so much it became very porous. The third recipe wasn’t even crunchy, only chewy.
I sat down and took the best out of each recipe and combine them into one to get this perfect, crispy yet chewy (from the cranberry not the dough) cookies that is not too sweet and not too porous either.
Ladies and gentlemen, here’s presenting my version of Cranberry Cornflakes Cookies recipe.
Cranberry Cornflakes Cookies
Ingredients:
150g self-raising flour
100g cornflakes (crushed)
125g salted butter
70g icing sugar
75g dried cranberries (chopped)
1 egg
1/2 tsp vanilla extract
I use salted butter hence no additional salt is required.
Method:
Preheat oven at 150C
Cream butter and icing sugar till smooth
Add egg and vanilla extract
Manually fold in flour followed by cornflakes and cranberry
Spoon the batter into balls and drop them onto lined baking tray
Bake the cookies in preheated oven at 150C for 30- 40 minutes or until cookies are golden brownÂ
Once done, remove from oven and let cookies sit on tray for 5 – 10 minutes before removing to cool on rack

As you can see, the cookies do not spread much hence we do not need to space them too far apart.

Again, these cookies look very yummy, I love cookies too, but I do feel threatening by its calories.
Both Ethan and Ayden would be so happy eating these cookies that they bake.
