Cook with Ethan: Ayam Pongteh
During the school holidays, Ethan managed to spend some time in the kitchen.
I guided him to cook this famous Peranakan dish, Ayam Pongteh.
Ingredients:
6 Chicken Drumsticks
2 Potatoes
4 Chinese Mushrooms
2 Tablespoon Tauchu
1 Teaspoon Dark Soy Sauce
2 Teaspoon Gula Melaka
5 Shallots (Pounded)
5 Cloves Garlic (Pounded)
Method:
1) Pound shallots and garlic
2) Slice mushrooms
3) Heat oil in wok
4) Fry garlic, onion and tauchu
5) Once fragrant, add in chicken
6) Add mushroom and potatoes
7) Add water
8) Add gula melaka and dark soya sauce
9) Let it simmer

I would like to try Ethan’s ayam pongteh. Never try the original Nyonya ayam pongteh but I did cooked once. Not sure if it is tasted like that.
You trained your boys well to cook. Mine?? Haha. The girl not even dare to flip the food in the pan. Lol.
I like how you cover the pestle and mortar with plastic bag so that the ingredients don’t “flying” out during the pounding process. But I don’t have it, can I just slice the garlic & onion thinly instead of pounding them?
By the looks of things, very soon you will retire from cooking and both your boys can take over.

Whoa! What a brilliant idea to use a plastic to cover while he pounded. I always used a kitchen towel instead which could not protect so well like this plastic bag! Clever mummy!
I love to eat Melaka’s Ayam Pongteh with lots of rice. I found several restaurants in KL that served less fragrant & sweet like those in Melaka. The chefs were probably not Peranakan but Banglakan. LOLOL
