Rice Cooker Cakes: Baked Sweet Corn Cake
My first rice cooker cake is steamed banana chocolate cake. Then I experimented with a different recipe making moist chocolate cake that turned out to be a total flop as it was too dense. Today, using the steamed banana chocolate cake recipe, I tried making sweet corn cake. Was super nervous to open the rice cooker when it was done as I was afraid it will be another failure but surprise, surprise, this is highly successful! It even has a very nice moist and buttery texture.
Using the same cup that I used for my first cake to get the measurement for this cake too. I super love this recipe as it calls for no kitchen scale and need no mixer. It is simple as simple can be.

Ingredients:
1 cup self-raising flour
1/2 cup sugar
50 g butter
1 egg (lightly beaten)
60ml fresh milk
1 cup sweet corn
The sweet corn is basically a whole cob of corn, removed from the cob. Because I’m making this for my toddler, I chose to blend it a little so it is not too chunky.
I blended the corn and milk together but not until too fine though just enough to break the kernel.
After blending.
In a bowl, mix butter and sugar together.
Add flour and egg. I added half a teaspoon of vanilla essence too.
Add corn milk and mix thoroughly.
Grease the rice cooker pot and pour in the cake mixture. Select CAKE and start baking. The rice cooker will stop at 45 minutes if I am not mistaken. If you are using a manual rice cooker, bake for 40 minutes.
The moment I opened the rice cooker cover, sweet and fragrant aroma of corn (and vanilla) filled my entire house! I am pleased to see a beautiful fluffy cake in the pot.
I was even more pleased when I cut the cake to see moist and buttery cake greeting me. Finally it’s a success!
This boy who had been patiently waiting got impatient already at the first sniff of the fragrant cake. He kept tugging me for a slice and got it.
Om nom nom. He finished the entire slice in no time!
Big bro Ethan came home from school shortly after, had a slice and loved it too. Okay, this recipe is definitely a keeper and we will be baking it again soon for sure :)

I think we have the same rice cooker..LOL. Hey can bake bread too. I have never tried it though..not even cake since I prefer to use oven. Maybe some day when the oven kaput, rice cooker will be the best solution.heheh

If I do not hv self raising flour, what flour should I use n how many tsp of baking powder do I need to add? How the cake taste like the next day?

I’m really sorry as I don’t have the answer to your first question. I don’t bake often so I am not sure how to substitute the flour. As for the cake taste and texture, it remains the same the next day.

wah using a rice cooker to bake cakes, or rather steam cakes!! brilliant idea that is, and why your cake macam senang to make only?? I dare not try leh, later my “chicken hand duck leg” spoil the rice cooker lagi teruk.. hahaha!!!

I follow your method and recipe but too bad the time I set for 40min is too short and the cake is bit wet still. And I use the corn which is very sweet then turn out the cake is too sweet. But I like the fragrance and will modified and try again. Thanks for sharing. Can u share about chocolate banana recipe?

The banana chocolate cake texture is unlike oven baked though. It’s more to steamed cake. I am still trying on many other recipes and will update my blogs with successful ones :)
