Homemade Red Bean Popsicle
It’s time to make popsicles again and this time, we are making red bean popsicle. Growing up, my favourite ais krim potong flavours are kacang merah, durian and jagung. I also like cendol and yam. I have tried making sweet corn popsicle and it turned out really well. You can refer to my popsicle posts here:

Let’s start with our red bean popsicle now. First, we need to make red bean paste.Â
But before that, we’ll need some red beans. Soak them overnight if you have the time.Â
Discard the soaking water, replace with fresh water and bring to boil. Once boiled, switch off the flame, cover the lid and leave it for at least 5-10 minutes.
Discard that boiled water, replace with another round of clean water and bring to a boil again. This time, once boiled, let it simmer.
Simmer until the beans are soft and the water dries up. You can also mash the beans a little. Add sugar at this stage.Â
You can actually make a larger amount of red bean paste and keep it frozen to be used in the near future. I did.Â
But look who can’t wait to eat? My lil monster is caught stealing some cooled red bean paste meant to be frozen! Haha.Â
Anyway, back to the red bean paste that is still on the stove. I did not use coconut milk as I am not too sure how well my kids can tolerate that so I resorted to fresh milk. Add a cup of fresh milk and bring to boil. While stirring, I kept mashing the red beans. I did not want to blend them as I like to have some chunky beans in my popsicle. Add a pinch of salt before turning of the flame.
Let the mixture cool.Â
Pour into the popsicle mold.
Freeze overnight.Â
Tah-dah! Red bean popsicle for my family.Â

So have you tried making the durian one? I guess there is no need to cook the pulp with milk, just mash like the banana?
