Sweet Peanut Soup
The scorching hot weather is really unbearable these days. To keep us cool, I boiled sweet peanut soup the other day. Sweet peanut soup is said to be heat-relieving. Peanuts are rich in energy and contain health benefiting nutrients, minerals, antioxidants and vitamins that are essential for optimum health.
It’s pretty simple to boil this delicious, refreshing dessert. Unlike common believes that it takes the whole night of boiling to achieve that melt-in-the-mouth consistency, it took me only 2-3 hours to achieve that. The secret is soaking the peanuts with baking soda.
Peeled raw peanuts.
I purchased these peeled raw peanuts. I don’t think I have the time to peel them myself. It’s not too costly either so yeah, it’s more convenient to just get the already peeled peanuts.
Soak peanuts overnight.
The next day, rinse and change the soaking water. Add a teaspoon of baking soda and let it soak for another 1 to 2 hours.
Rinse thoroughly. Transfer the peanuts into a pot. Add water. Bring to boil for at least 2 hours. The peanuts should soften by now.
Lower heat to simmer. Add a cup of homemade soya milk or you may just use store-bought soy milk. You may omit this if you don’t have soy milk at home. Add rock sugar. Let simmer for another 10 minutes and it’s ready!
Delicious melt-in-the-mouth sweet peanut dessert. Hot or chilled? I like it both ways.
Oh yeah, I sometimes add store-bought glutinous rice balls too and have it for tea :)

That day, after Ethan’s tooth extraction, we took him to Snowflake coz it is just across the road. I add-on Barley and guess what? One spoonful of barley for RM1.90!!!!! So freaking expensive!

Seriously expensive. I dont think I wanna go there anymore. Quality wise also not very consistent anymore…
I like to eat peanut soup (sweet or savoury) but I find that after eating a few bowls, will be passing a lot of wind after a few hours, hahaha.
Ahh… Nuts do that to ppl sometimes eh? Strangely I dont have that problem. Must check with my kid if he does as he ate/drank quite a lot of this soup.
That’s so nice for hot weather like this. I almost went to ‘Hui Lau Shan’ desserts in City Square JB yesterday but my kids hold us back for Baskin Robbins. sigh…
