Lemon Chicken Recipe
Every since I made that resolution to cook more often so my family can have home-cooked food at least 4 days a week, I’ve been at dead-end every night thinking what to cook the next day. It’s either chicken or fish and it’s always the same old, same old. I’m afraid Darling and Ethan will get bored and not looking forward to come home for lunch anymore.
The other day, I tried dishing out Lemon Chicken as Darling and Ethan love this. The original recipe calls for the use of chili flakes but I omit that out as Ethan has yet to acquire the love for chili.
Ingredient:
*Lemon Sauce*
1/2 cup water
1/2 cup lemon juice
3 tablespoons brown sugar
3 tablespoons cornstarch
3 tablespoons honey
2 teaspoons chicken granules
1/2 teaspoon ginger
1/2 teaspoon lemon zest
*To coat the chicken*
1 cup cornstarch
1 teaspoon salt
Dash of pepper
3 egg yolks
Method:
To coat the chicken, first combine cornstarch, salt and pepper.Â
Dip chicken in cornstarch. Dip in beaten egg yolk and lightly dust in cornstarch again.Â
Fry until crispy. Remove. Set aside on kitchen towel to absorb excess oil.
In a saucepan, combine all ingredient for the lemon sauce. Cook over medium heat. Add in the chicken and coat thoroughly.
Served with lemon slices this turned out OKAY! :D Both Darling and Ethan enjoyed it.
Next time, I’ll add the chili flakes though as I just can’t tahan eating this without it. The chili flakes makes this dish look nicer!
