Old Cucumber Soup Recipe
One of my new year resolution is to have home-cooked food more often. Throughout the entire year we only dined at home like once every week and that is so unhealthy. So to kick start the coming new year, I’m going to learn how to cook and the first thing to do is learn how to boil kick-ass nutritious yet delicious soup! :D
Today we have the refreshing Old Cucumber Soup to start our day and I’m feeling a whole lot healthier already :PĀ Old Cucumber Soup is believed to have heat-reducing properties.
Ingredients:
– One whole old cucumber
– 1.5 litre water
– 10 to 12 red dates
– 200g pork ribs
– 1/2 sweet corn
– 1 whole carrot
Peeled and cut carrot, sweet corn and red dates
The usual recipe calls for the use of dried squid and scallops but Darling is not a fan of dried seafood and I’m trying to use only the freshest ingredients in my soup so we decided to eliminate those two from our soup :D
Chinese Old Cucumber
Rinse and cut the old cucumber into wedges. Just scrub the skin, no need to remove it. Scoop the seeds out using a spoon.
Method:
– In a small pot, bring water to boil for blanching of the pork ribs.Ā Once the water boils, add the pork ribs into the water and remove once the surface changes to white. Ā Drain the pork ribs and set aside.Ā Discard the water.
– In a slow-cooker, add water, blanched pork ribs, old cucumber, carrot, corn and dates. Set to AUTO and go to SLEEP. Wake-up next morning to a house filled with delicious sweet corn aroma.
– Add salt to taste and serve hotĀ
My slow-cooker surely comes handy and I’m loving waking up to HOT and NUTRITIOUS soup! :D
Everything dumped into the slow-cooker before I go to bed at night.
The soup ready for consumption when I wake up the next morning :D

i also do not bother with the dried seafood. i do add a little chinese almonds as they are good for nourishing the lungs and spleen.

I just cooked this soup 2 days ago. However, I didn’t put in so many ingredients. Just the old cucumber, red dates and “kei chi”. I use chicken carcass instead of pork ribs. Cheaper but still tasty :)

My daughter’s favorite ‘lau tibun’ soup which her grandma used to cook. Yeah agree eat at home would surely consume less MSG.
