Ayam Pong Teh recipe
I’m bored of eating packed food all the time. I’m bored of eating instant noodles at home so today I decided to cook. Yes, the reason it did not rain today is because Submerryn COOKS! What did I cook? Ethan’s favourite Ayam Pong Teh.
Ayam Pong Teh
It would have looked better if more dark soy sauce is added giving it a darker shade but oh well.. realized it only now, too late dy, everything is in the tummy dy :D
To cook ayam pongteh, we’ll need shallots, garlic, taucu (ground bean paste), gula melaka (palm sugar), potatoes, shiitake mushroom and some thick soy sauce.
Peel and pound shallots and garlic. Note that the ratio of shallots and garlic to the taucu is not correct here as I deliberately pound extra shallots and garlic to be used to fry some vege later :)
Of course we will need chicken. My Pong Teh is pork free as I don’t cook pork at home.
Heat oil over medium heat, add shallots and garlic and fry for a couple of minutes, making sure not to burn the paste. Add taucu and continue frying until fragrant.
Add chicken and fry again, coating the chicken with the the shallots, garlic and taucu paste well.
Add some water and throw the mushroom in. Bring to boil. Add palm sugar.
Once boiled, reduce fire and let it simmer. Potatoes should be added last as it will be too soft and breaks if added too early. Add thick soy sauce to give the dish a better shade of dark brown.
A good Pong Teh should be an appetizing combination of savory saltiness with undertones of sweetness. Taken with Sambal Belacan, it is extremely delicious! :D
